Creamy Cucumber Salad

  • 4 medium Lebanese cucumber, spiralled into noodles
  • 1 cup edamame, thawed
  • 4 spring onions, finely chopped 
  • 1 cup greek yogurt, sub for coconut yogurt greek style
  • 1 tbsp red wine vinegar
  • Zest and juice of 1 lemon
  • 2 tbsp fresh chopped oregano
  • 1/2 small garlic clove, minced
  • 1tbsp maple syrup 
  • Salt & pepper to taste 

Add all ingredients to bowl, mix well!
